Physical Care – Healthy, Happy Holiday Drinks

With the holiday season having already started there are foods and drinks that are all time favorites.  Everyone has family recipes that have been handed down from generation to generation, but some of those foods and drinks have a bit more calories than we’d like and ingredients that aren’t very healthy for us.

So, for this holiday time I thought a few tips on how to make Healthy Happy Holiday Drinks would offer a great way to enjoy any festivities you have in mind.

LIGHT NUTELLA EGGNOG

Serves: About 6 people
Prep time: 5 minutes
Cook time: About 15 minutes

Ingredients:

  • 1 1/2 cups 1% milk
  • 1/4 cup light cream
  • 2 eggs
  • 1 egg yolk
  • 1/4 cup sugar
  • 1 tablespoon corn starch or flour
  • 1 vanilla bean
  • 2 tablespoons of Nutella
  • 1/4 cup Captain Morgan spiced rum

Directions:

  1. Heat 1 1/2 cups milk in a medium size saucepan. Cut vanilla bean in half lengthwise and remove seeds. Add the pods and seeds to the milk. Bring to a simmer and let thicken, about 6 minutes.
  2. Meanwhile, whisk eggs, egg yolk, sugar and flour/cornstarch together until fully mixed. Once milk mixture has thickened, add it to the bowl of egg mixture. Carefully whisk them together. Immediately pour the egg/milk mixture back into the saucepan. Let simmer again until thick, stirring constantly) until mixture thicks to the back of a spoon), or about 6 – 8 minutes. *Do not skip the stirring part, otherwise the mixture will congele.
  3. Once thickened, remove from the heat and stir in the cream to stop the cooking. Whisk in the Nutella until fully mixed. Place eggnog on an ice bath, whisking constantly, until cooled. *Do not skip this part either, or else the mixture will thicken too quick into a pudding like substance. Once chilled, whisk in rum and serve!

CHILLED or HOT SPICY SPIKED CIDER COCKTAIL

Prep Time: 30mins
Cook: 10mins

Enjoy this cocktail warm or chilled. When choosing apple cider, look for a high quality bottle — we usually buy the cider sold in glass jars.  Makes 4 drinks

Ingredients:

  • Spiced Cider
  • 4 whole cloves
  • 2 whole cinnamon sticks
  • 2 whole star anise
  • Juice of one orange
  • 4 cups apple cider
  • 3/4 cup spiced rum
  • Cinnamon Sugar Rim
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • Orange rinds left from squeezing juice

Directions:
Toast the cloves, cinnamon sticks and star anise in a large saucepan over medium heat until fragrant, about 2 minutes.

Pour in the orange juice and apple cider. Bring to a low simmer, turn off the heat and set aside for 10 minutes. Strain then cool completely. When cool, stir in the rum.  (Rum is optional)

Make the cinnamon sugar by mixing the cinnamon and sugar on a plate.

Swipe the orange rind around the rim to moisten. Press the rim into the cinnamon sugar, fill the glass with ice and top with spiced cider.

PEPPERMINT COSMO

Makes 8 drinks

Ingredients

  • 1 Cup of pomegranate juice
  • The juice of 1 lime
  • 4 Ounces of vodka
  • 1/4 teaspoon of peppermint extract
  • 8 ice cubes
  • 8 mini candy canes
  • 2 TBsps of chopped, fresh mint

Prepare

  1. Combine juices, vodka, peppermint and 1/2 cup water in a shaker with ice.
  2. Shake vigorously and strain into 8 shot glasses.
  3. Garnish with candy canes and mint.
